Cheesy Spinach & Mushroom Pumpkin Bake

Ingredients:


  • 200g of pumpkin
  • 150g of mushrooms
  • 100g of spinach
  • 3 eggs
  • 100ml of milk
  • 50g of feta cheese
  • 50g of gouda cheese
  • 50g of cottage cheese
  • 50g of mozzarella cheese

Kitchen Tools Needed:


  • Microwave Oven
  • Air Fryer
  • Stove Top

Instructions:


  • Preheat the air fryer to 180°C (356°F).
  • Peel and dice the pumpkin into small cubes. Boil the pumpkin in a pot on the stove with a little water until tender, about 10 minutes.
  • In the microwave, heat the spinach for 1-2 minutes until wilted.
  • In a mixing bowl, combine the cooked pumpkin, chopped mushrooms, wilted spinach, milk, and eggs. Mix well until combined.
  • Add the feta cheese, gouda cheese, cottage cheese, and mozzarella cheese into the mixture, stirring to combine evenly.
  • Pour the mixture into a greased baking dish that fits in your air fryer.
  • Place the baking dish in the air fryer and cook for 15-20 minutes until the top is golden and puffed up.
  • Remove from the air fryer and let it cool for a few minutes before serving.
