Cheesy Onion and Egg Bread Delight

Ingredients:


  • 2 large eggs
  • 4 slices of bread
  • 1 teaspoon sea salt
  • 1 cup brewed coffee
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese

Instructions:


  • Melt 2 tablespoons of butter in a skillet over medium heat. Add the chopped onion and sauté until translucent and caramelized, about 8-10 minutes.
  • While the onions are cooking, scramble the eggs in a bowl and add 1 teaspoon of sea salt.
  • After the onions are ready, push them to the side of the skillet and pour the beaten eggs into the empty side. Stir gently to scramble them until fully cooked.
  • Once the eggs are cooked, mix them with the caramelized onions in the skillet.
  • Toast the bread slices in the microwave or on the stove top until golden brown.
  • In a baking dish or microwave-safe plate, layer the toasted bread, egg and onion mixture, and top with shredded cheddar cheese.
  • Place the dish in the microwave for about 2-3 minutes, or until the cheese is melted and bubbly.
