Creamy Potato and Carrot Frittata

Ingredients:


  • 3 large eggs
  • 100g of cream cheese
  • 200g of potatoes (diced)
  • 100g of carrots (grated)

Instructions:


  • Boil the diced potatoes in a pot of water for about 10 minutes until they are tender, then drain.
  • In a mixing bowl, whisk the eggs until well combined.
  • Add the cream cheese to the eggs and mix until smooth.
  • In a skillet on the stove top, add the boiled potatoes and grated carrots, then pour the egg and cream cheese mixture over them.
  • Cook on medium heat for about 15-20 minutes, or until the eggs are set around the edges.
  • Carefully slide the frittata onto a plate and cut into wedges to serve.
