Chocolate Mandarin Cake

Ingredients:

  • 3 Eggs
  • 150g of Flour
  • 200ml of Milk
  • 50g of Stevia
  • 50g of Sugar
  • 30g of Cocoa Powder
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • 2 Mandarins (peeled and segmented)

Instructions:


  • Preheat the oven to 180°C (350°F).
  • In a blender, whisk together the eggs, milk, stevia, and sugar until smooth.
  • In a separate bowl, combine the flour, cocoa powder, baking soda, and baking powder.
  • Gradually add the dry ingredients to the wet mixture, blending until well combined.
  • Fold in the mandarin segments gently to avoid breaking them apart.
  • Pour the batter into a greased cake pan and smooth the top.
  • Bake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
  • Serve the cake warm or at room temperature, dusted with some extra cocoa powder if desired.
