Sweet Potato Puffed Rice Delight

Ingredients:


  • 200g of sweet potato
  • 100ml of almond milk
  • 20g of coconut sugar
  • 80g of poha (flattened rice)
  • 30g of puffed rice
  • Pinch of salt
  • 1 tsp of cinnamon
  • 2 tbsp of maple syrup

Instructions:


  • Peel and chop the sweet potato into cubes, then steam them until tender.
  • Mash the steamed sweet potato in a bowl until smooth.
  • In a separate bowl, mix the almond milk and coconut sugar together until dissolved, then add it to the mashed sweet potato.
  • Add the poha, puffed rice, salt, and cinnamon to the sweet potato mixture and combine well.
  • Preheat the oven to 180°C (350°F).
  • Spread the mixture evenly on a baking tray lined with parchment paper.
  • Drizzle maple syrup on top for added sweetness.
  • Bake for 20-25 minutes until golden and crispy.
  • Let it cool for a few minutes before serving.
