Spicy Gochujang Udon Noodles

Ingredients:


  • 200g of udon noodles
  • 50g of gochujang
  • 1 tablespoon of sesame oil
  • 2 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 1 cup of assorted vegetables (bell peppers, carrots, and broccoli)
  • 2 green onions, chopped
  • 1 tablespoon of soy sauce
  • 1 teaspoon of rice vinegar
  • A pinch of salt and pepper to taste

  • Air Fryer

Instructions:


  • Cook the udon noodles according to the package instructions, then drain and set aside.
  • In a blender, combine gochujang, sesame oil, garlic, ginger, soy sauce, rice vinegar, salt, and pepper. Blend until smooth to make the sauce.
  • Heat a large skillet over medium heat and add a tablespoon of oil. Sauté the assorted vegetables until tender-crisp, about 5-7 minutes.
  • Add the cooked udon noodles to the skillet with the sautéed vegetables. Pour the gochujang sauce over the noodles and toss to combine, ensuring the noodles are evenly coated with the sauce.
  • Transfer the noodle mixture to an air fryer basket, and air fry for about 5 minutes for a crispy texture. Be sure to shake the basket halfway through cooking.
  • Serve the spicy gochujang udon noodles garnished with chopped green onions.
