Mixed Greens and Turnip Stew

Ingredients:


  • 100g of Rocket Leaves
  • 150g of Turnip, diced
  • 100g of Spinach
  • 50g of Onion, chopped
  • 80g of Mustard Leaves
  • 100g of Radish, sliced
  • 50g of Shallots, minced
  • 100g of Lettuce, chopped
  • 50g of Spring Onion, sliced
  • 75g of Green Peas

Kitchen Tools Needed:


  • Blender
  • Food Processor
  • Stove Top
  • Pressure Cooker

Instructions:


  • Heat a pressure cooker over medium heat and add the chopped onion and minced shallots, sauté until they are translucent.
  • Add the diced turnip and sliced radish, cooking for about 5 minutes until they begin to soften.
  • Stir in the mustard leaves and spinach, cooking until they're wilted.
  • Add the green peas and a little water, then cover the pressure cooker and cook for about 10 minutes on high pressure.
  • Release the pressure and open the lid. Using a blender, blend half of the mixture until you achieve a creamy consistency.
  • Return the blended mixture to the pressure cooker, stirring gently to combine with the remaining chunky vegetables.
  • Add the rocket leaves and lettuce, allowing them to wilt in the warm stew for 2-3 minutes.
  • Adjust seasoning to taste; serve hot garnished with sliced spring onion.
