Ingredients:
- 1 large head of cauliflower (about 800g)
- 200g of dairy-free cream cheese
- 100g of nutritional yeast
- 1 cup of almond milk
- 2 cloves of garlic, minced
- 1 teaspoon of smoked paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons of olive oil
- 1/2 cup of chopped fresh parsley

Instructions:
- Preheat the oven to 180°C (350°F).
- Chop the cauliflower into small florets and steam until tender, about 10 minutes.
- In a mixing bowl, combine the dairy-free cream cheese, nutritional yeast, almond milk, minced garlic, smoked paprika, salt, and black pepper. Whisk until smooth.
- Once the cauliflower is steamed, transfer it to the baking dish and pour the creamy mixture over it, mixing gently to coat the florets.
- Drizzle with olive oil and sprinkle parsley on top for garnish.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
