Cheesy Cauliflower Bake

Ingredients:


  • 1 large head of cauliflower (about 800g)
  • 200g of dairy-free cream cheese
  • 100g of nutritional yeast
  • 1 cup of almond milk
  • 2 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons of olive oil
  • 1/2 cup of chopped fresh parsley

Instructions:


  • Preheat the oven to 180°C (350°F).
  • Chop the cauliflower into small florets and steam until tender, about 10 minutes.
  • In a mixing bowl, combine the dairy-free cream cheese, nutritional yeast, almond milk, minced garlic, smoked paprika, salt, and black pepper. Whisk until smooth.
  • Once the cauliflower is steamed, transfer it to the baking dish and pour the creamy mixture over it, mixing gently to coat the florets.
  • Drizzle with olive oil and sprinkle parsley on top for garnish.
  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.
