Spicy Peas and Egg Rice Bowl

Ingredients:


  • 1 cup of cooked rice
  • 1 small onion, finely chopped
  • 1/2 cup of green peas
  • 2 green chillies, finely chopped
  • 2 eggs
  • 1 inch piece of ginger, grated
  • 1/2 cup of curd
  • Salt to taste
  • Oil for cooking

Instructions:


  • Heat some oil in a pan on the stove top.
  • Add the chopped onion and sauté until it becomes translucent.
  • Stir in the grated ginger and green chillies, cooking for an additional minute.
  • Add in the green peas and cook for about 2 minutes, stirring frequently.
  • Push the vegetable mixture to one side of the pan and crack the eggs into the empty side, scrambling them until fully cooked.
  • Mix the scrambled eggs with the vegetable mixture and season with salt to taste.
  • Add the cooked rice to the pan and stir thoroughly until all ingredients are well combined and heated through.
  • Serve the rice bowl warm with a side of curd.
