Quick Beef Wellington Bites

Ingredients:


  • 200g of beef tenderloin
  • 100g of puff pastry
  • 50g of mushrooms, finely chopped
  • 50g of foie gras or pâté
  • 1 egg, beaten
  • Salt and pepper to taste
  • Fresh thyme leaves

  • Baking Sheet

Instructions:


  • Preheat the oven to 200°C (400°F).
  • In a frying pan, add the chopped mushrooms and sauté until they are softened and the moisture has evaporated; season with salt, pepper, and fresh thyme.
  • Remove from heat and let cool.
  • Season the beef tenderloin with salt and pepper, then quickly sear it in the same frying pan over high heat for 1-2 minutes on each side for a rare finish.
  • Roll out the puff pastry on a baking sheet to about 2-3 mm thick.
  • Spread a layer of the mushroom mixture on the pastry, then place the seared beef on top, followed by a layer of foie gras or pâté.
  • Wrap the puff pastry around the beef, sealing the edges, and brush the top with beaten egg.
  • Bake in the preheated oven for about 15-20 minutes until the pastry is golden brown and puffed up.
