Ingredients:
- 200g of beef tenderloin
- 100g of puff pastry
- 50g of mushrooms, finely chopped
- 50g of foie gras or pâté
- 1 egg, beaten
- Salt and pepper to taste
- Fresh thyme leaves

Instructions:
- Preheat the oven to 200°C (400°F).
- In a frying pan, add the chopped mushrooms and sauté until they are softened and the moisture has evaporated; season with salt, pepper, and fresh thyme.
- Remove from heat and let cool.
- Season the beef tenderloin with salt and pepper, then quickly sear it in the same frying pan over high heat for 1-2 minutes on each side for a rare finish.
- Roll out the puff pastry on a baking sheet to about 2-3 mm thick.
- Spread a layer of the mushroom mixture on the pastry, then place the seared beef on top, followed by a layer of foie gras or pâté.
- Wrap the puff pastry around the beef, sealing the edges, and brush the top with beaten egg.
- Bake in the preheated oven for about 15-20 minutes until the pastry is golden brown and puffed up.
