Mediterranean Couscous Salad

Ingredients:


  • 150g of couscous
  • 100g of chickpeas (cooked)
  • 50g of cherry tomatoes (halved)
  • 50g of cucumber (diced)
  • 30g of red onion (finely chopped)
  • 15g of feta cheese (crumbled)
  • 30ml of olive oil
  • 20ml of lemon juice
  • 5g of fresh parsley (chopped)
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:



  • Mixing bowl
  • Measuring cups
  • Knife
  • Cutting board

Instructions:


  • In a mixing bowl, combine couscous and 200ml of boiling water. Cover and let it sit for 5 minutes until the couscous absorbs the water.
  • Fluff the couscous with a fork and let it cool.
  • Add the cooked chickpeas, cherry tomatoes, cucumber, red onion, and feta cheese to the bowl.
  • Drizzle olive oil and lemon juice over the mixture.
  • Season with salt, pepper, and chopped parsley.
  • Toss all ingredients together until evenly mixed. Serve chilled or at room temperature.
