Ingredients:
- 500g of grated carrots
- 1 liter of full-fat milk
- 150g of sugar
- 100g of ghee
- 50g of mixed dry fruits (cashews, almonds, raisins)
- 1 teaspoon of cardamom powder
- Pinch of saffron strands (optional)

Instructions:
- In a heavy-bottomed pan, heat the ghee over medium flame.
- Add the grated carrots and sauté for about 5-7 minutes until they soften.
- Pour in the milk and bring to a boil, then reduce the heat to low and let it simmer, stirring occasionally.
- Once the milk is reduced, add sugar and mix well. Continue to cook for another 10-15 minutes until the mixture thickens.
- Add cardamom powder and saffron strands (if using), mixing well.
- In a separate pan, lightly roast the mixed dry fruits until golden.
- Serve the halwa warm, garnished with the roasted dry fruits.
