Gajar Halwa with Milk and Dry Fruits

Ingredients:


  • 500g of grated carrots
  • 1 liter of full-fat milk
  • 150g of sugar
  • 100g of ghee
  • 50g of mixed dry fruits (cashews, almonds, raisins)
  • 1 teaspoon of cardamom powder
  • Pinch of saffron strands (optional)

  • Heavy-bottomed pan
  • Wooden spoon
  • Measuring cups
  • Serving bowls

Instructions:


  • In a heavy-bottomed pan, heat the ghee over medium flame.
  • Add the grated carrots and sauté for about 5-7 minutes until they soften.
  • Pour in the milk and bring to a boil, then reduce the heat to low and let it simmer, stirring occasionally.
  • Once the milk is reduced, add sugar and mix well. Continue to cook for another 10-15 minutes until the mixture thickens.
  • Add cardamom powder and saffron strands (if using), mixing well.
  • In a separate pan, lightly roast the mixed dry fruits until golden.
  • Serve the halwa warm, garnished with the roasted dry fruits.
