Ingredients:


  • 200g of all-purpose flour
  • 150g of caster sugar
  • 100g of unsalted butter, softened
  • 3 large eggs
  • 200g of mixed dried fruits
  • 50g of walnuts, chopped
  • 100ml of milk
  • 1 tsp of baking powder
  • 1 tsp of ground nutmeg
  • 1 tsp of ground cinnamon
  • 1 tsp of vanilla extract
  • 2 tbsp of brandy (optional)
  • Decorative icing for topping

Instructions:


  • Preheat the oven to 180°C (350°F) and grease your cake tin.
  • In a mixing bowl, cream the softened butter and caster sugar until light and fluffy.
  • Add the eggs one by one, mixing well after each addition.
  • In another bowl, combine the all-purpose flour, baking powder, ground nutmeg, and ground cinnamon. Gradually fold this dry mix into the wet mixture.
  • Stir in the milk, mixed dried fruits, chopped walnuts, vanilla extract, and brandy if using, ensuring everything is well incorporated.
  • Pour the cake batter into the prepared cake tin and smooth the top with a spatula.
  • Bake in the preheated oven for about 20 minutes, or until a skewer inserted into the center comes out clean.
  • Once baked, allow the cake to cool in the tin for 5 minutes before transferring it to a cooling rack to cool completely.
  • Decorate the cooled cake with festive icing and any additional decorations as desired.
