Instructions:
- In a mixing bowl, combine the full-fat coconut milk, Greek yogurt, honey, and vanilla extract. Whisk until smooth and well combined.
- Fold in the melted dark chocolate gently with a spatula until you achieve a marbled effect, but do not overmix.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks into the molds and tap gently to remove any air bubbles.
- Place the molds in the freezer for about 4-6 hours or until completely frozen.
- To serve, run the molds under warm water for a few seconds to release the popsicles.
