Blueberry Coffee Cake Muffins

Ingredients:


  • 1 cup of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 cup of buttermilk
  • 1 large egg
  • 1/4 cup of unsalted butter (melted)
  • 1 cup of fresh blueberries
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of cinnamon

Instructions:


  • Preheat your oven to 350°F (175°C) and grease your muffin tin.
  • In a mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, egg, melted butter, vanilla extract, and cinnamon until well combined.
  • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
  • Gently fold in the blueberries into the batter.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm.
