Ingredients:
- 500g chicken
- 200g potatoes
- 100g carrots
- 1 onion
- 100g capsicum
- 50g lettuce
- 2 tbsp vegetable oil
- 400ml chicken broth
- 50g gelatin
- 50g jam
- 50ml cognac

Instructions:
- Preheat oven to 180 degrees Celsius.
- Carefully beat the chicken fillet, season with salt and pepper.
- Boil the potatoes and carrots until soft, then cut them into cubes.
- Heat vegetable oil in a frying pan, fry the onion until golden brown, add capsicum and fry for a couple more minutes.
- Mix the boiled vegetables with the fried ones, add chicken broth and some gelatin. Then mix everything thoroughly in a blender until smooth.
- Place the vegetable mixture on the chicken fillet and roll it into a roll. Secure with skewers.
- Place the roll in a baking dish, pour over the cognac and cover with foil.
- Bake in the oven for 30-35 minutes, then remove the foil and bake for another 10-15 minutes until golden brown.
- For the sauce, mix the jam with the remaining gelatin and heat in the microwave until liquid.
- Serve the roll hot, drizzled with sauce and garnished with salad.
