Baked chicken roll with vegetables

Ingredients:


  • 500g chicken
  • 200g potatoes
  • 100g carrots
  • 1 onion
  • 100g capsicum
  • 50g lettuce
  • 2 tbsp vegetable oil
  • 400ml chicken broth
  • 50g gelatin
  • 50g jam
  • 50ml cognac

Instructions:


  • Preheat oven to 180 degrees Celsius.
  • Carefully beat the chicken fillet, season with salt and pepper.
  • Boil the potatoes and carrots until soft, then cut them into cubes.
  • Heat vegetable oil in a frying pan, fry the onion until golden brown, add capsicum and fry for a couple more minutes.
  • Mix the boiled vegetables with the fried ones, add chicken broth and some gelatin. Then mix everything thoroughly in a blender until smooth.
  • Place the vegetable mixture on the chicken fillet and roll it into a roll. Secure with skewers.
  • Place the roll in a baking dish, pour over the cognac and cover with foil.
  • Bake in the oven for 30-35 minutes, then remove the foil and bake for another 10-15 minutes until golden brown.
  • For the sauce, mix the jam with the remaining gelatin and heat in the microwave until liquid.
  • Serve the roll hot, drizzled with sauce and garnished with salad.
