Zesty Vegan Lemon Cake

Ingredients:

  • 2 cups of almond flour
  • 1 cup of coconut sugar
  • 1/2 cup of unsweetened applesauce
  • 1/2 cup of unsweetened almond milk
  • 1/4 cup of fresh lemon juice
  • Zest of 2 lemons
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 tablespoon of vanilla extract

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the almond flour, coconut sugar, baking soda, baking powder, and salt.
  • In another bowl, mix together the applesauce, almond milk, fresh lemon juice, lemon zest, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
