Ingredients:

- 2 eggs, beaten
- 2 green onions, chopped

Instructions:
- Heat vegetable oil in a wok over medium-high heat.
- Add diced chicken and cook until slightly browned.
- Push chicken to the side, pour beaten eggs into the wok and scramble until cooked through.
- Add mixed vegetables to the wok and stir-fry for a couple of minutes.
- Add rice, soy sauce, and sesame oil. Stir everything until well combined and heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
