Ingredients:

  • 150g of chicken breast
  • 100g of quinoa
  • 50g of cherry tomatoes
  • 50g of cucumber
  • 30g of avocado
  • 50g of bell pepper
  • 10ml of olive oil
  • 5g of salt
  • 5g of black pepper
  • 15g of lemon juice
  • 10g of parsley

Kitchen Tools Needed:

  • knife
  • cutting board
  • measuring cups
  • spoon

Instructions:

  • Cook the quinoa according to package instructions, then set aside to cool.
  • Season the chicken breast with salt, pepper, and lemon juice, then grill on a pan over medium heat until cooked through, about 6-7 minutes on each side. Let it rest before slicing.
  • In a mixing bowl, combine the cooked quinoa, diced cherry tomatoes, cucumber, bell pepper, and avocado.
  • Chop the grilled chicken and add it to the salad mixture.
  • Drizzle the olive oil over the salad, add more salt and pepper to taste, and toss everything together until well combined.
  • Garnish with chopped parsley before serving.
